Yes, we are talking about the “Tanoor” which is now a part of the Arab culture to a point that no Eid is complete without enjoying this food in Dubai.
Preparing Tanoor brings together families with their own choice of marinated meat, usually goat or beef, which is then wrapped in leaves such as mango, banana, or even special mountainous ones. Once wrapped and marked, the meat is individually placed in baskets made up of palm tree leaves, reaching up to a count of 30 in total, ready to be cooked.

The prepared underground oven, which uses a special kind of firewood from the Samr tree to give a uniquely rich taste to the meat, is set up in which all the baskets are lowered. The heated well is then covered with a heavy lid and piles of sand in order to reduce the fire and make sure that no air enters to cause reignition.
Being checked from time to time for any leaks or openings, the meat is left to cook for 24 hours and once done, the lid is removed and each basket is pulled out individually with the help of a long metal hook and handed over to its rightful owner, thanks to the markings put up at the beginning.
